Summer Muffins

Wow. I can't believe that summer is already over, and now I'm back in school. Another new school, with new people in a new place.

Anyways, I wanted to show off some of the cupcakes and muffins that I made this summer.
Firstly, this summer I discovered a new frosting (from my sister's blog) - that has now become my favorite frosting to use because it's so easy to make and you can be really creative with it.

So, we call it: Marshmallow Frosting

Ingredients:
- 4 egg whites
- 3,5 dl sugar
- 1,2 dl light syrup
- salt
- 2 tsp vanilla extract

You need to use a water boiler to heat the ingredients. Start with putting some water to boil in a large pot. Then mix the ingredients in a pot or bowl that will be put into that pot (so make sure it fits well). Once the water starts to boil, but the bowl into the pot (the bowl with the ingredients inside shouldn't actually be floating in the boiling water). Heat the ingredients for about 5 minutes and keep stirring. Then take the bowl with the ingredients out of the boiling water and whip the ingredients until you get a thick, glossy cream.
If you want to make a colorful cream, then now is the time to add food coloring. If you do decide to do so, then make sure you mix it properly - otherwise the frosting will be unevenly colored.

I love baking in the summer, because you can take the simplest cupcake or muffin recipe and then add lots of different berries to it.

We had a get together at my brother's house, so I decided to make these delicious little treats. I especially loved them because the combination of sour berries and super-sweet marshmallow frosting was mouthwatering. I should also note that after I frosted my muffins, I popped them into the oven for just a few minutes so that the outer layer of the frosting got hard, so there was a little crunch when you bit into the muffin. 


The next time I decided to use this frosting, I wanted to be a bit more creative. I got a little inspiration from the Internet, and decided to make rainbow marshmallow frosting. I sold these cupcakes at a fair that I worked at this summer and they seemed to be pretty popular. The cupcake itself was vanilla raspberry. (also, people were fascinated by this mysterious "marshmallow" frosting)


I got the idea for my last cupcakes with marshmallow frosting from my sister's blog, which was the original recipe where I discovered the frosting.

Summer is on its way!

With only 3 weeks of school left everything kind of starts to happen really fast.. especially considering the fact that in 3 weeks time I'm gonna be all packed up and out of here.
I mean how do you really say bye to someone, knowing that you probably won't ever see them again? I guess now a days it isn't really necessary, because you can keep in touch with your friends through Skype and Facebook and what not..
However for those of you that have moved, you may have noticed that you have friends who say "OMG we should totally keep in touch and OMG you have to come visit me!!", but none of that ever happens. After a little while you just kind of forget to keep responding to their messages and only rarely see what's going on with them through their pictures on Facebook. On the other hand, there are those people who you do actually keep in touch with and actually end up visiting, which is great!

During these last 3 weeks (2 and half in fact) I've got so much planned and happening that it feels like my head is gonna explode. It's a bunch of last minute stuff that I wanna do before I leave Switzerland and then of course I wanna spend every last minute I can get with my friends and then I have to pack...and...and... it's a never ending list!!

You know that feeling when you have so much to do that you just give up and decide to do nothing instead? - Yeah, that's how I feel..

Anyways...I've always been the girl that leaves and here I am again, although I think that this is my last move (at least as an adolescent), because I only have two more years of school left. Even though I think this, it might not be true and that's why I've given up on planning almost anything for the future, because I know that anything could change in the blink of an eye. This leads on to another thing which I've been thinking about lately..

So, how is it that you decide what you want to do with your life? Where you want to go to college and what you want to learn? So many questions with so many answers!!
I mean I have many many diverse ideas about what I'd like to go on to study and where I'd like to work, but none of these are actually plans. Besides, these ideas change everyday. Bah!! Growing up is so complicated :/
I read somewhere that to find the ideal job you have to decide what you'd like to do, and what would make you happy and then combine that with what you're good at; or at least it was something along those lines..

However; I'd prefer to end this post on a more positive note :)
So last weekend was pretty busy due to the whole "only 3 weeks left" thing, but I got to do some of my favourite things: bake and paint nails!! Also, the sun finally came out and I decided to wear a summery outfit on Monday :D

Who am I?


Hi, I'm Little Muffin Baker :)


There's a lot that I could tell you about myself, way too much to fit in one blog post for sure, so for now I'm just going to cut it short. Besides, I don't want this blog to be about my past. I want to talk about anything and everything and a lot about my baking.

To sum things up about my past: I have been living abroad since I was 3, moving to a different country about every 2 or 3 years. I've lived in Europe, Central America and Africa. It's been pretty crazy, but I've loved every bit of it and I'm thankful for all the experience that I've gained from a life like this. It's great having friends all over the world, but it's always nice to have a place you can go back home to where all my family is. 

A little bit about myself: I'm a crazy, cheerful, positive girl. I'm still figuring things out for myself and getting to know myself better and better everyday. The most important thing for me is that I enjoy life to the fullest and find a little bit of good in everything. I love to be around my friends and family. I love to read because with a good book I can escape from this world for just a little bit. A world with magic is always better ;) I love music, but then again I think pretty much every teenager out there does. 

So to end my post I would just like to remind you to appreciate  every moment of every single day of your life. Live in the moment :)
